What extentions to I use?

First thing I install is JCE

Its always the first thing I install. I bought the subscription.

Then its on to Akeeba Backup Professional

Because backups are a part of everyday life. This is one that I pay for and happily. Best documentation ever. Works flawlessly.

Ever been hacked? I have. You know why I don't worry about getting hacked? Akeeba Backup.

Then, Joomla Update Manager

Because I never know when the next update to Joomla will be released.

To keep an eye on things, Eyesite

Eyesite doesn't stop hackers but it will tell you when they have broken your security, changed your files or added new ones to your site.

When I don't go the CCK route, FJ Related

We don't have subcategories yet in Joomla (looking forward to 1.6 guys!) but with some simple meta info, you can create the illusion of subcategories or putting articles in multiple categories. Very handy tool if you have ever tried to explain to a client why one article can't be in two categories.

Speaking of CCK...

Tried K2, Flexicontent and jSeblod so far. K2 is the easiest. jSeblod looks to be the most powerful but its very confusing. Flexicontent is in the middle but still very buggy. K2 is the only one I have put on a production site but in a few days I will have JSeblod in production also. None of these tools are ready for primetime on Joomla 1.5. The developers are focusing efforts on J1.6 and I can't blame them.
